High standards of butchery in Lincolnshire Poacher competition

FOOD producers from across the county have been celebrating following success at the Lincolnshire Poacher competition.

The biannual awards are run by the Lincolnshire County Food Group and were established to promote Lincolnshire Pork products and encourage high standards of butchery.

At an award ceremony held at the Epic Centre in Lincoln last week, Louth once again hit the headlines, further securing its reputation as a food town, when Trevor Fairburn Butchers of Mercer Row won the 2012 Lincolnshire Butcher of the Year Award.

With six golds, four silvers and a bronze, Trevor Fairburn Butchers won the coveted title on aggregate points awarded over 12 classes.

Mr Fairburn said the award was made more satisfying because of the fierce competition around the county.

He said: "At this level the hard work and commitment put into achieving these awards pays off in so many ways. It is a tribute to my staff and to the support I get from Louth itself.

"While it's disappointing that the county again has been denied protected status for its Lincolnshire sausage, the fact that Louth wins so many prizes for its food products speaks volumes for consistency, creativity and quality."

Success was also enjoyed by RJ Hirst family butchers of Station Road, Woodhall Spa who received awards in all nine categories they entered including gold awards in the Burger; Pork, Beef and Tomato Sausage; Gluten Free Sausage and Steak Pie categories.

Sadie Hirst, said: "This is a big achievement for us, in this our ninth year of RJ Hirst High Class Family Butchers in Woodhall Spa.

"We are a team of four. Russell Hirst, who is a local butcher with over 30 years experience, prides himself on keeping traditional artisan butchery skills alive and producing the highest quality local specialities.

"I produce the baked goods for the shop and specialise in reviving historic Lincolnshire recipes and the team is completed with Sharon and Fiona our loyal shop assistants.

"We are especially pleased to have achieved a Bronze for our Hand Raised Pork Pie, which we launched in the shop only a month ago.

"I have worked hard to ensure the pie has the perfect combination of hand made hot water pastry, beautifully seasoned pork and jelly and is hand raised using the traditional dolly."

First time entrant Jason Willis of Millstream Butchers in Sleaford was delighted to come away with nine awards, two of them gold.

Mr Willis said: "I am ecstatic. I knew we had half a chance of a couple of bronzes as I spent a lot of time preparing the foods but I never expected to get as many."
