Amador has kept the restaurant décor elegant and clean he said he “had a vision of the Ole Ole being rustic” The use of renovated old whiskey barrels, from Lincoln furniture company, as table bases is just an example of Amador’s ingenuity; using locally sourced materials in keeping with Bailgate’s historic picturesque roots.
Amador’s wife Alison said “we’ve tried to keep all the original features, the floors, the cast iron ovens; the restaurant features are very similar to a typical Spanish house.”
Ole Ole shares a spacious secluded garden with the Bailhouse Hotel which Amador has said will “provide extra dining space for customers, especial with the recent good weather.” Ole Ole is focused on using the “limited space” to their full advantage and ensuring “everyone who comes has a good experience, and receives top customer service.”
Due to the size of the restaurant Amador said “once there are a few people in the restaurant there’s an atmosphere, especially as I’m a big personality”.
Ole Ole is confident their quality food and service will help make the restaurant’s reputation grow.
