Factory worker Ricardo Morais was returning to work in Newark when the 29-year-old suddenly drew the blade from her handbag and attacked him, Lincoln Crown Court was told.
Mr Morais managed to stop the car by pulling the handbrake and flagged down a passing motorist who took him to hospital where the wound was stitched.
A judge was forced to halt the trial after one of the barristers fell ill – but Bastos decided to admit the charges when it was re-listed at Lincoln Crown Court yesterday.
Bastos, of High Street, Lincoln, pleaded guilty to unlawfully wounding Mr Morais, possessing an offensive weapon and perverting the course of justice betweenMay 21 and 23, 2008.
Judge Michael Heath granted Bastos bail for the preparation of a psychiatric report but warned her she could be jailed when she is sentenced next month.
